Ingredients:
1 cup butter
1 cup brown sugar
1/4 cup white sugar
2 eggs
1/2 tsp vanilla essence
180g bitter sweet chocolate, cut into chunks
50g roasted hazelnuts, roughly chopped
2 1/4 cups flour
1 tsp baking powder
Pinch of salt
Method:
Preheat the oven to 180 ° C.
Beat the butter and the sugar in a mixing bowl, until light
and fluffy.
Add the eggs, little by little beating well in between each
addition. Beat in the vanilla.
Stir in the chocolate chunks and the nuts.
Sieve in the flour, baking powder and salt, and food
together.
Scoop up table spoon sized pieces of the cookie dough and
roll it into balls. Space the balls evenly on a lined baking sheet and flatten
with a fork.
Bake cookies for 8-10 mins until golden Brown and crispy on
the edges but still light and soft in the centre.
Remove from the oven and allow to cool slightly before
removing from the baking slide.
